Those who are Guiness fans know what a perfect pour looks like - including the right ratio of nitrogen and carbon dioxide gas mix. Nitrogen for the creamy foam aka head, and CO2 to work the proper carbonation. Things to think about while you are erging? More that I recently saw the swirl that is a Guiness pour that suddenly goes from murky to clear..and the science, equipment and settings that make all that happen are just cool! (I only had a taste...).
