Hitting a "plateau" in training?

Is it true that if you do a certain workout repeatedly (say a constant pace 60min erg) that you will eventually hit a plateau in your training? Ie: you train and see see improvements for a while and then hit a spot where your performance just stays constant with no improvement, or even starts to get less

One thing that I have definately seen in my training, is the benefit of incorporating different workouts, both mentally and physically..

Changing it up as in different lengths of the session? Or like pyramids for example during the row?
